Start by preheating your oven to 400F. Dust your work surface, then roll the pastry to smoothen the seams. Cut it in half to make two long rectangles.
In a small mixing bowl, add the sausage, one beaten egg, grated onion, minced garlic, and breadcrumbs. Mix until well combined. Divide the mixture in half, then add on the prepared pastry. Shape each into a log.
Beat the other egg and use it to brush one long side of each pastry. Roll each pastry over the sausage and overlapping the other side, then roll to seal.
Place it on your cutting board with the sealed edge on the bottom. Cut each into 8 pieces. Transfer to a baking sheet lined with parchment paper. Brush each one with the remaining beaten egg, then sprinkle with sesame seeds.
Place inside the preheated oven and bake for 20 to 25 minutes. The sausage should have a 160F internal temperature.
While baking, make the sauce by combining all ingredients.
