As a busy person myself, it’s hard for me to cook every day, so meal-prep dishes are my go-to. While searching for a new recipe, I found this rainbow salad from The Domestic Geek on Youtube. What I like about this recipe is that it’s so healthy and full of protein and fiber; perfect for those people who watch their diet closely. It’s also flavorful, super filling, and easy to make! Ingredients:

  • 3 tbsp avocado oil
  • 2 tbsp apple cider vinegar
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 2 cups cooked quinoa
  • 1 – 19 oz can chickpeas, drained and rinsed
  • 1 English cucumber, diced
  • 1 cup shredded red cabbage
  • 1/2 cup corn kernels, drained
  • 1 cup matchstick carrots, shredded
  • 1 red bell pepper, diced
  • 1/4 red onion, finely diced
  • 2 tbsp chopped fresh parsley
  • salt and freshly ground black pepper, to taste

Directions:

Step 1

To start, make the dressing. In a bowl, combine 3 tbsp avocado oil, 2 tbsp apple cider vinegar, 1 tsp honey, and 1 tsp Dijon mustard. Season with some salt and ground black pepper. Mix well to combine, then set it aside. Now, prep and cut the ingredients accordingly.

Step 2

Once done chopping all the veggies, start assembling the salad. In a large bowl, add 2 cups of cooked quinoa followed by one can of rinsed chickpeas, 1 diced cucumber, 1 cup of shredded red cabbage, 1/2 cup of corn kernels, 1 cup of shredded carrots, 1 diced red bell pepper, 1/4 finely diced red onion, and 2 tbsp chopped fresh parsley. Lastly, drizzle the apple cider dressing over.

Step 3

Once done, toss everything well together to combine, then transfer and divide it into your meal prep containers and you’re done. Enjoy!
