I am always on the lookout for a new spinach recipe. Spinach is my favorite vegetable in the whole world, and I have started growing spinach in my home garden. I recently found this spinach, potato, and mushroom casserole video recipe tutorial by Turkish Food Travel, on YouTube, and I knew immediately this was going to be a family favorite. This spinach and potato casserole makes the perfect side dish for any meat entree, especially roast lamb. There are so many things this casserole will taste excellent with, but it is so great all on its own as well.

Ingredients For Potato, Spinach, And Mushroom Casserole:

Ingredients For Potato Puree:

  • 5 big potatoes
  • 2 to 3 tablespoons of butter
  • 1 cup of whole milk
  • salt (to taste)

Ingredients For The Spinach And Mushroom Layer:

  • 1 big onion (chopped)
  • 4 tablespoons of olive oil
  • 500 grams of spinach
  • 300 grams of mushrooms
  • Salt (to taste)
  • Freshly ground black pepper (to taste)

Ingredients For Bechamel Sauce:

  • 3 tablespoons of olive oil (or 2 tablespoons of butter)
  • 2 tablespoons all-purpose flour
  • 1 1/2 cup milk
  • A pinch of nutmeg
  • salt (to taste)
  • Grated mozzarella (or Kashar cheese, for topping)

You start by cooking your mashed potato mixture and spreading over the bottom of a greased casserole dish. Then, pour the creamy spinach mixture over the mashed potatoes and top with cheese.
