Potatoes and eggs are some of my favorite breakfast staples. However, I’ve never had them infused and cooked together before. In this case, Toasted’s potato omelette recipe looks simple to make. There are nice spices in this recipe, and it’s a healthy breakfast meal too. I like how this omelette can be cooked to a crisp where you can cut them in slices and eat them as a snack. I’m shocked that I haven’t heard about this omelette before, but it’s perfect for vegetarians too. The ingredients in this recipe are inexpensive and easy to prepare. Also, it’s always optional to add anything else to a recipe such as meat. I know some people love having meat in their meals at all times, but I would be fine with just the potatoes and egg mix.

Ingredients:

  • 2 medium-size potato
  • 2 tbsp oil
  • 2 tbsp onion
  • 1/8 tsp chili powder
  • 1/8 tsp turmeric powder
  • salt to taste
  • 2 eggs
  • 1 tbsp coriander
  • 2 pieces green chili
  • 1 tsp chili flakes
  • 1 tbsp oil

Directions:

First, peel your 2 medium-size potatoes and cut them into thin pieces. Then, wash the potatoes slices in cold water. Sautee the onions on a pan until they’re brown, and add the potatoes after.

Next, in a separate bowl, crack 2 eggs and add your seasonings too. Then, add the cooked potatoes into the egg mixture, and cook it on a pan. I would cook both sides a little crispy.

Overall, I love this potato omelette concept because it sounds perfect to eat as a snack too. I bet this recipe would be phenomenal if I added cheese on top. A cheesy potato omelette sounds like perfection after every bite and dipped in hot sauce. This would be great to have this serve as a hash bowl, and pan-fried together instead of an omelette form.
