Ingredients:

  • 1.5 lb fresh marinated fresh pork tenderloin
  • 3 to 4 large sweet potatoes, cubed
  • 2 sweet bell peppers, chopped
  • 2 medium shallots, sliced
  • 2 tbsp olive oil
  • 1/3 cup maple syrup
  • 2 tsp salt to taste
  • 1 tsp smoked paprika
  • 1/2 cup crumbled goat cheese
  • 1/2 cup pomegranate arils
  • chopped parsley, for garnish
  • 1/4 cup maple syrup, for topping; if desired

Directions:

Step 1

Preheat your oven to 400 degrees F and line your baking tray with parchment paper. Next, prepare your veggies by chopping them accordingly, then place them in a large bowl. After this, slice your marinated pork tenderloin into smaller pieces, then place them in the same bowl with the veggies. Once you’re done chopping the ingredients, it’s time to season everything. Pour in 2 tbsp olive oil, 1/3 cup of maple syrup, 1 tbsp of herb de Provence (mix of thyme, rosemary, and lavender), 2 tbsp of salt, and 1 tbsp of smoked paprika. Toss everything together.

Step 2

After mixing everything well, pour them into your lined baking tray and cover them with foil. After this, place the baking tray in your preheated oven at 400 degrees F and bake with the foil on for 20 minutes, then take the foil off and continue baking for another 10 minutes until the sweet potato is fork tender.
