Ingredients:

  • 2/3 cup all-purpose flour
  • 1 tsp baking powder
  • 1 tsp Italian herb blend
  • 1/2 tsp garlic powder
  • 1/2 tsp granulated onion powder
  • 1/4 tsp ground black pepper
  • 6 large eggs
  • 1/2 cup heavy cream
  • 1/3 cup parmesan
  • 8 oz shredded low-fat moisture mozzarella
  • 8 oz mushrooms, cut into slices
  • 3 Roma tomatoes, cut into slices
  • 1/2 bell pepper, cut into strips
  • 1/3 small red onion, cut into slices

Directions:

Step 1

Preheat your oven to 450 degrees F. Next, prepare the veggies, cut them accordingly, and set them aside. After this, crack six large eggs in a large bowl, whisk them, then add 1/2 cup heavy cream, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1 tsp Italian herb blend, and 1/3 cup parmesan. Mix together until combined. Next, sift 2/3 cup of all-purpose flour and 1 tsp baking powder. Add 1/4 tsp ground black pepper and continue to mix until there are no lumps.

Step 2

Oil a large baking sheet and line it with parchment paper. Drizzle a little more olive oil over the parchment paper, then start layering half of the veggies in the bottom (except the bell pepper). Sprinkle some Italian seasoning, then pour the egg batter. Sprinkle half of your shredded mozzarella cheese, then layer the rest of the veggies along with the bell pepper. Top it with the remaining shredded mozzarella, then place the sheet-pan pizza in the preheated oven. Bake for 20 to 25 minutes.
