Ingredients:

  • 2 large boneless skinless chicken breasts
  • 1 tbsp olive oil, plus more as needed
  • 1/2 tsp dried oregano
  • 1/2 tsp fine sea salt, plus more to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp freshly cracked black pepper
  • 1/2 cup pizza sauce (of marinara sauce)
  • 1 cup shredded mozzarella cheese
  • 1 Roma tomato, thinly cut into 8 slices
  • 8 slices pepperoni
  • fresh basil leaves, for garnish

Directions:

Step 1

Preheat your oven to 400 degrees F and grease a 9 x 13 casserole dish with a bit of oil. Set it aside. Cut the chicken breasts lengthwise with four cutlets, then pound them to an even thickness. Once done, season each piece on both sides with salt, freshly ground black pepper, garlic powder, and dried oregano. Set them aside. Next, heat 1 tbsp olive oil in a large skillet over medium-high heat. Once heated through, cook the chicken in batches for two minutes on each side or until brown. After browning, transfer the chicken to the prepared casserole dish in a single layer.

Step 2

Now, spread the pizza sauce over each chicken, then top with a generous amount of shredded mozzarella cheese. For the toppings, add some freshly sliced tomatoes and slices of pepperoni. Place the casserole dish in the preheated oven uncovered and bake for 25 minutes or until the cheese has fully melted and browned on spots. After baking, garnish with fresh basil leaves. Serve and enjoy!
