Ingredients:

  • 1 (20 oz) can pineapple chunks in juice
  • 1 tsp vegetable oil
  • 1/2 yellow onion, roughly chopped
  • 6 unpeeled garlic cloves
  • 1/4 cup chile garlic sauce
  • 3 tbsp fresh mint leaves
  • 1/4 tsp salt
  • 1/4 cup seasoned rice vinegar

Directions:

Step 1

Drain the canned pineapple, let it sit there for five minutes, then transfer it to a lightly oiled foil line pan (save the juice for later.) To the pineapple, add the roughly chopped onion as well as the six garlic cloves. Arrange everything in an even layer, then broil them in the oven under high heat until nicely charred. Once done, let them cool down.

Step 2

After cooling down, transfer them to a bowl (peel the garlic cloves first) and add 1/4 cup chile garlic sauce, 3 tbsp fresh mint leaves, 1/4 tsp salt, the reserved pineapple, and 1/4 cup seasoned rice vinegar. Blend these all together using an immersion blender. After blending, cover the salsa with cling wrap and chill it a bit in the fridge before serving.
