Ingredients:

  • 2 tbsp vegetable oil
  • 1 onion, peeled and diced
  • 2 cloves garlic, peeled and minced
  • 4 cups boiled and cooled long-grain rice
  • 1/2 tbsp sesame oil
  • 2 eggs
  • 2 tbsp dark soy sauce, divided
  • 1/4 tsp salt
  • 1/4 tsp garlic salt
  • 1 tbsp lemon juice

To Serve: 

  • 1/2 bunch of spring onions/scallions, chopped

Directions:

Step 1

Heat 1 tbsp vegetable oil in a large wok and add the diced onion. Cook and stir constantly over medium heat for five minutes until the onion starts to turn translucent. Next, add another tablespoon of oil along with the minced garlic, then cook for another 30 seconds. After this, add the cooked and completely cooled long-grain rice to the wok, then add 1/2 tbsp sesame oil. Toss everything together using a spatula for five minutes.

Step 2

After five minutes, push the rice over to the side of the pan, and crack two eggs to the space. Add a splash of dark soy sauce, then scramble the eggs. Once done, mix the egg into the rice. Add 1 1/2 tbsp dark soy sauce, 1/4 tsp salt, and 1/4 tsp garlic salt. Stir together. Lastly, drizzle 1 tbsp lemon juice, taste it, and adjust the seasoning at this point before removing the fried rice from the pan. Serve with chopped spring onions. Enjoy!
