Last night, I was browsing the internet for meals I will serve on the dinner table this Christmas. I already had everything set from appetizers to the main course, the only thing that’s missing is dessert. The kids and kids at heart in the family love a good chocolate dessert, but I don’t want to do the serve the same dish, again and again, every year. I was lucky to stumble upon this recipe by Sugar Spun Run on YouTube, its not your ordinary classic whoopie pie because she has put a fun twist to it, peppermint! I already cooked some to taste test and all I can say is that I can’t wait until Christmas is here and let the family taste this wonderful treat.

Materials:

Cookie dough

  • 1 cup Granulated sugar
  • ⅓ cup Butter, unsalted
  • 1 large Egg, lightly beaten
  • 1 tsp Vanilla extract
  • ¾ cup Sour cream
  • 2 cups All-purpose flour
  • ½ cup Dark cocoa powder
  • 1 tsp Baking soda
  • ¼ tsp Baking powder
  • ½ tsp salt
  • ½ cup Hot water

Filling

  • 6 oz white chocolate, chocolate chips, or chocolate bar
  • 1 cup Unsalted butter, softened
  • 2 cups Powdered sugar
  • ½ tsp Vanilla extract
  • ¼ tsp Peppermint extract
  • ⅛ tsp Salt
  • 1 tbsp Heavy cream

Directions:

Step 1

Preheat your oven to a 450°F then put parchment paper on your baking sheet and set it aside. In a large mixing bowl, beat the sugar and butter with a hand mixer until the texture becomes creamy and well-combined. Add the egg, vanilla extract and sour cream to the mixture then continue mixing at low speed until its color turns pale yellow. In a separate bowl, whisk the flour, cocoa, baking soda, baking powder, and salt, whisk together before adding the flour mixture, mix with a spatula and fold until completely combined. Drop the batter onto the baking sheet using a rounded tablespoon-sized scoop, space the cookies at least 2″ apart. Bake in a preheated oven for 5 minutes and allow cookies to cool for 5-10 minutes before transferring to a cooling rack.

Step 2

Melt and heat the white chocolate in the microwave for 15-20 seconds, stirring well in between until completely melted and smooth. Set aside and allow to cool until it is no longer warm to the touch then proceed. In a large bowl, beat the butter with a hand mixer until the texture becomes smooth and creamy. Drizzle in the melted and cooled chocolate, then beat until completely combined. Gradually add powdered sugar, salt, vanilla, and peppermint extracts, then stir until completely incorporated. Add the heavy cream while slowly increasing the speed to a high setting, beat for 15-30 seconds. Dollop or pipe the filling onto the cookies then top with another cookie.
