Start by chopping pecans and placing them on a baking sheet. Bake them at 350F for about 6 minutes or until fragrant. After 3 minutes, move them around to ensure even toasting. Set it aside and let it cool.
Cut the cold butter into small pieces then add to the bowl of your stand mixer. Add salt, powdered sugar, and granulated sugar. Mix on medium speed until it becomes a paste. Make sure to scrape the sides of the bowl if needed.
Add the vanilla and flour. Beat on low speed until almost combined. Add the nuts and mix again on low until well incorporated. Make sure to scrape down the sides of the bowl. If it becomes very crumbly, drizzle a tablespoon of water to help it come together.
Transfer the dough out onto a lightly floured surface and roll it into a log. If you want a smaller cookie size, make two narrow logs. Wrap each one in parchment paper or plastic. Refrigerate for at least an hour.
Preheat your oven to 350F, then line 2 baking sheets with parchment paper. Slice the log between 1/2 and 1/4 inch thick coins. Place them on the prepared baking sheet about 2 inches apart. Bake them for 12 minutes or until slightly golden on the edges. Halfway through, rotate the pan for even baking. Once done baking, allow them to cool completely.
