Ingredients:

  • 2 medium or large chicken breasts (cut in half)
  • 2 celery ribs (diced)
  • 3 green onions (chopped)
  • 1/2 cup of dried cranberries
  • 1/2 cup of roasted pecan halves
  • 1 heaping cup of red seedless grapes (cut into 4)
  • 1 cup of mayonnaise
  • 2 tablespoons of cream cheese (room temperature)
  • 1 tablespoon of dijon mustard
  • 1 tablespoon of honey
  • zest of 1/2 lemon
  • juice of 1/2 lemon
  • 1/2 teaspoon of pepper
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of garlic powder
  • croissants (any type of bread)
  • potato chips (optional)

For the roasted pecans:

  • 1 tablespoon of melted butter
  • 1/2 cup of pecan halves
  • pinch of salt

To boil the chicken:

  • 3 chicken breasts
  • 1 celery rib
  • small piece of onion
  • 1/3 teaspoon of peppercorns
  • 1 teaspoon of salt

Instructions:

Step 1:

Place a dutch oven over high heat, add the chicken, and fill with water until they are submerged. Add 1 teaspoon of salt, 1/3 teaspoon of peppercorns, a small piece of onion, 1 celery rib, and 1 teaspoon of salt. Wait until the water comes to a boil, and lower the temperature to simmer between 15 to 18 minutes. Do not overcook the chicken. Once done, remove from water.

Step 2:

In a pan, add melted butter, 1/2 cup of pecans, and a pinch of salt. Toast it around until they have a nice even color for about 3 to 4 minutes. Set aside on a plate once done. Chop them into small pieces.

Step 3:

Chop the chicken into cubes, place on a plate, and cover.

Step 4:

In a small bowl, add mayonnaise, cream cheese, honey, and mustard. Whisk to combine. Transfer into a big bowl, add the celery, green onions, chopped pecans, cranberries, grapes, zest and juice of lemon, garlic powder, pepper, and salt. Mix everything until well combined.

Step 5:

Add the chicken cubes into the mixture and toss around. Slice the warm croissant in half and add the chicken salad. Serve with grapes and chips on the side. Enjoy!
