In the bowl of your stand mixer with the paddle attachment, add peanut butter and softened butter. Alternatively, you can use a bowl and a hand mixer. Beat on medium speed until smooth and well combined.
Mix in the vanilla extract.
Turn the mixer on low speed, then gradually add the powdered sugar. Once well incorporated, add graham cracker crumbs and mix to combine.
Line a baking sheet with parchment paper or wax paper. Take a tablespoon of the mixture and roll it into a ball. Place on the prepared sheet. Repeat with the remaining mixture.
Place them in the freezer for about 20 minutes.
Once the balls are chilled, add chocolate chips and chocolate bark to a medium-sized microwave-safe bowl. Microwave for a minute, then stir to combine. If not fully melted, microwave it for 30 seconds more.
This step is optional. If you want your chocolate balls to have a shiny chocolate coating, add 1 tablespoon of coconut oil to the melted chocolate.
Dip the peanut butter balls into the melted chocolate one at a time, then place them back on the lined baking sheet. Sprinkle graham cracker crumbs or flakey sea salt on top if desired.
Refrigerate for 10 minutes to set. Once set, enjoy immediately or store in an airtight container in the fridge for up to 3 days.
