  • 1/2 Cup of Caster Sugar (Super Fine White Sugar)

  • 1 tsp of Vanilla Extract
  • 3/4 Cup of Peanut Butter
  • 1 Egg
  • 1 1/4 Cups of Plain All-Purpose Flour
  • 1 tsp of Baking Powder
  • Approx. 1/3 Cup of Jam (I used Raspberry Jam)

First, in a large mixing bowl, add room temperature butter, peanut butter, white granulated sugar, brown sugar, and vanilla extract. Next, once the cookie dough is ready, roll them into a ball, and place them on a baking tray with parchment paper. Use your thumb to create an indentation at the center of the cookie, and fill the center with jam. Bake in a preheated oven at 320F for 12-15 minutes.
