Season the salmon with salt and fresh ground black pepper and squeeze some lemon juice on both sides.
Place a large skillet over medium heat and pour 2 tablespoons of light olive oil. Once hot, place the salmon pieces, skin side down on the skillet. Let it cook for a few minutes on both sides then set it aside on a plate as you make the creamy sauce.
In the same pan, add the unsalted butter. Once melted, add the minced garlic, chopped onions, and white wine. Mix then allow it to reduce slightly. Next, add the heavy cream to the pan and stir until well combined. Bring it to a gentle simmer.
Once simmering, add salt, pepper, and baby spinach leaves. Let it simmer for 1 minute then add the parmesan cheese, and lemon slices. Transfer the salmon back into the pan and let it simmer for another 2 minutes. Serve on a plate and garnish with chopped parsley.
