Homemade Italian Sausage:
To start, peel and cube the potatoes, then parboil them in salted water for about five minutes. Next, season your ground pork with 2 tsp Italian spice mix, 1 tsp salt, 1 tsp ground black pepper, 1/2 tsp cayenne, and 1/2 tsp nutmeg. Mix it well until the seasonings are incorporated. Once done, cook the homemade sausage in a large pan over medium-high heat until brown. Set the sausage aside when done.

Next, dice the red bell pepper and onion, and saute them in the same pan. Once softened, add two cloves of minced garlic and continue to saute for another two minutes. After this, transfer the sauteed veggies to your casserole dish, then add the cooked sausage and the potatoes. Slightly mix it. In another bowl, crack six eggs, mix in 1/3 cup milk, and season with 1/4 tsp ground black pepper. Whisk well. Once whisked, stir in 2 cups of shredded mild cheese.
Pour the egg mixture over the potatoes and meat, mix them a bit, then top everything with another 1/2 cup of shredded cheese. Cover it with aluminum foil and store it in the fridge until ready to bake. (When baking it, set the oven to 375 degrees F and bake it covered for the first 20 minutes, then remove it and continue to bake for the last 10 to 15 minutes.)
