Ingredients:

  • 2 medium yellow onions, sliced thinly
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp cooking oil
  • 2 lb ground beef
  • 2 cups beef broth
  • 2 tsp minced garlic
  • 1 can (10 oz) French onion soup
  • 1/4 tsp garlic powder
  • 1/2 cup frozen peas
  • 1/8 tsp black pepper
  • 1 cup long-grain white uncooked rice
  • 1/8 tsp salt
  • 1 cup Swiss, mozzarella, or gruyere cheese

Directions:

Step 1

Heat a large skillet over medium-high heat and add 2 tbsp of cooking oil. Once the oil has heated through, add the sliced onions and season with 1/4 tsp salt and 1/4 tsp black pepper. Saute for five to seven minutes until the onions are caramelized. After this, remove them from the pan and transfer them to a bowl and set aside. In the same pan, add the ground beef. Break it up and cook until browned. (Drain off any excess grease.) Once browned, add 2 tsp minced garlic, a pinch of salt, and a pinch of black pepper. Mix well.

Step 2

After a minute, add 2 cups of beef broth, 1 can of French onion soup, 1/4 tsp garlic powder, the caramelized onions, and 1/2 cup of frozen peas. Stir everything well, raise the heat to high, and bring it to a boil. Once it boils, add 1 cup of long-grain white uncooked rice. Stir it in, turn the heat to low, place the lid on, and cook for 20 minutes until the rice is tender and cooked through. After 20 minutes, turn off the stove, add 1 cup of shredded cheese on top, and stir it in. Serve and enjoy.
