Ingredients:

  • 3 tbsp extra virgin olive oil
  • 5 garlic cloves, finely minced
  • 2 medium onions, chopped
  • 1 yellow capsicum, cut into 1″ squares
  • 1 red capsicum, cut into 1″ squares
  • 14 oz smoked sausages, sliced into 1/4″ thickness
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 3/4 tsp smoked paprika
  • 1 & 1/2 cups of long-grain white rice
  • 2 & 1/2 cups chicken stock, low sodium
  • 2 cups of frozen peas, thawed
  • 2 tbsp parsley, chopped (optional)

Directions:

Step 1

Heat 3 tbsp extra virgin olive oil in a pot over medium-high heat, add the sliced smoked sausages and cook it. Set aside. Next, add the chopped onions and minced garlic. Saute for two minutes, then add the capsicum and cook for another two minutes. Add the rice, chicken stock, salt, pepper, paprika, and cooked sausage. Mix well and bring to a boil, then reduce to low. Cover it with a lid and simmer for 20 minutes.

Step 2

After 20 minutes, remove the pot from the stove. Remove the lid, then add the thawed peas and cover again for ten minutes. After this, remove the lid and mix gently to combine all the ingredients. Garnish with some chopped parsley, then serve.
