Season your chicken thighs with 1/2 tsp dried basil, 1/2 tsp dried thyme, 1 tsp onion powder, 1 tsp garlic powder, and salt and ground black pepper to taste. Massage the chicken thighs with your hands, making sure everything is well coated. Set aside. Next, prep the veggies: diced one onion, minced five garlic cloves, thinly slice the mushrooms, and roughly chop the parsley. Set them aside. Now, heat a large pot over high heat and add 1 tbsp of olive oil. Place the chicken thighs and sear each side for three and a half minutes. After cooking, place on a plate and set aside.

In the same pan over medium-high heat, add 1 tbsp unsalted butter and 2 tbsp olive oil. Add the diced onion and saute for three minutes. Next, add the minced garlic and saute for 45 seconds, then add 1/4 cup of white wine. Mix for 1 1/2 minutes, deglazing the pan. After this, add the sliced mushrooms and season with salt to taste. Stir until the mushrooms are golden and soft, then pour 4 cups of chicken stock and 2 cups of thickened cream. Mix well to combine. (Taste test at this point and season accordingly.) Bring the sauce to a boil, then add the pasta. Mix it well and bring the sauce back to a boil, then reduce the heat to medium and simmer for 12 minutes.
While waiting, thinly slice the cooked chicken thighs. Going back to the sauce, add 1.4 oz grated parmesan cheese and chopped parsley. Mix well, then add the basil and the chicken after one minute. Stir them in to combine, then remove from heat. Serve and enjoy!
