This one-pot creamy chicken and biscuits bake from Simply Mamá Cooks is the perfect dish for a cold night. It’s so comforting, creamy, and filling. How can you resist a delicious, warm pot of meal loaded with vegetables, chicken, biscuits, and herbs? It’s simply the best; there’s nothing more I could ask for.

Biscuits:
Add 1/4 cup of oil in a 12″ cast iron skillet over medium heat and then add 3 tablespoons of butter. Once the butter is melted, add diced onion, celery, and carrot. Season with a pinch of salt, then sauté until onions are translucent and carrots are softened.
Mix in minced garlic and sauté for 1 more minute. Move the vegetables to the side of the pan.
Add chicken breast and seasonings. Mix, then cook.
Sprinkle all-purpose flour and cook for 1 minute.
Pour chicken broth and stir. Allow the sauce to thicken.
Add whole milk and simmer until thickened. Turn off the heat.
Prepare the biscuits. In a bowl, mix self-rising flour and a pinch of salt. Next, add the butter and work it in with your hands until crumbly. Mix in the buttermilk.
Using an ice cream scoop, scoop 9 biscuits and place on top of the creamy chicken.
Bake in a 435F preheated oven for about 20 minutes until the biscuits are done.
Once done baking, brush a tablespoon of melted butter on the tops of the biscuits. Add some freshly chopped parsley.
