Ingredients:

  • 4 chicken boneless thighs or breasts, cubed
  • salt and pepper, to taste
  • 1 small onion, chopped
  • 3 cloves of garlic, chopped
  • 1 red bell pepper, chopped
  • 1 cup of long-grained rice
  • 1 tbsp of paprika
  • 1 & 1/2 cups of chicken stock
  • 1 can of crushed tomatoes (with liquid)
  • 3 leaves of chopped basil
  • 1/2 lemon, squeezed

Directions:

Step 1

Add some oil to a preheated pan, then add the chicken. Season them with ground black pepper and salt. Let them fry for four to five minutes on each side. After frying, set them aside. In the same pan, add the chopped onion, garlic, and red bell pepper. Saute them until fragrant, then add 1 cup of long-grain rice.

Step 2

Add 1 tsp of paprika, then season with some ground black pepper and salt. Stir to combine. After this, add 1 & 1/2 cups of chicken stock and 1 can of crushed tomatoes. Give it a stir until well-combined, then add the chicken back. Bring to a boil, then simmer over medium heat for 15 minutes. After 15 minutes, cover the pan and simmer for additional ten minutes.
