Ingredients:

  • 3 medium chicken thighs
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1 tsp Italian seasoning
  • 1/2 tsp hot pepper flakes
  • 1 small onion (chopped)
  • 4 cloves garlic (chopped)
  • 1 large (22 oz) jar of marinara sauce
  • 1 medium potato (diced)
  • 1 medium red bell pepper (cubed)
  • 2 medium stalks of celery (chopped)
  • 1 small carrot (chopped)
  • 3/4 cup green olives (optional)
  • 1 tsp extras salt, pepper, and Italian seasoning (if you feel it’s necessary)

Directions:

Step 1

In a pan over medium-high heat, add some cooking oil, then add the chicken, skin side down. Season it with some salt, ground black pepper, Italian seasoning, and hot pepper flakes. Fry both sides of the chicken thighs until they’re cooked through (about 4 to 5 minutes.) After the chicken is cooked through, add the chopped onions and 4 cloves of chopped garlic. Saute until fragrant. Next, add 1 jar (22 oz) of marinara sauce into the pan. Stir it. After this, add the cubed potato, cubed red bell pepper, chopped stalks of celery, chopped carrot, and a few green olives (optional). Season it with some salt, black pepper, and Italian seasoning.

Step 2

Stir it until everything are well combined. After this, spread a few green beans over the top. Cover with a lid, reduce the heat to medium-low, and simmer it for about 20 minutes. After 20 minutes, your dish is now ready to be served.
