The Olympics are over, but I still can’t forget one thing about the event, and it wasn’t the sports or the athletes, but the chocolate muffin that went viral online! I am so curious about how it tastes and I wanted to try it so bad, and thankfully, I found a great copycat recipe online that I can try.

Step 1
In a large bowl, add the flour, cornstarch, cocoa powder, brown sugar, baking soda, baking powder, and salt, then whisk them until uniform, and set the bowl aside. In a separate bowl, add the buttermilk, eggs, melted butter, vegetable oil, and vanilla extract, then whisk until smooth, using a hand mixer, combine the wet mixture with the dry mixture until smooth.
Step 2
Add 1½ cups of chocolate chips followed by the hot espresso, then mix them again until combined, and cover the bowl. Let the mixture rest for about 15 minutes, then preheat your oven to 425°F, and line your jumbo muffin pan with parchment paper or muffin cups. Fill each cup evenly until full, then cut the dark chocolate bar into 8 equal pieces, and a piece to each muffin gently pushing it down the center.
Step 3
Sprinkle the remaining chocolate chips over the top of each muffin, then place them in the preheated oven, and let them bake for about 8 minutes. Lower the temperature to 350°F, then allow the muffins to bake for 15 more minutes until a toothpick inserted at the center comes out clean, and let them cool. Serve and enjoy!
