Cut the chicken breast into smaller pieces, transfer them to a large mixing bowl, then season with 2 tsp garlic salt, 1 tsp onion powder, 1 tsp white pepper, and 1/2 tsp salt. Mix well. Next, heat 2 tbsp olive oil in a heavy-bottomed pot over medium-high heat. Once the oil is hot, go ahead and add the chicken and cook for five minutes. After this, remove them from the pot, then add another tablespoon of olive oil and 4 tbsp of butter. Once the butter has melted, reduce the heat to medium, and add the onions, celery, and carrots. Saute for seven minutes, then add the minced garlic. Cook for another 3o seconds.

Now, add 4 tbsp all-purpose flour, mix it in, then pour 4 cups unsalted chicken broth and 3 cups heavy cream. Mix well. Season with 3 tbsp better than bouillon, 1/2 tsp parsley, 1/2 tsp thyme, and 1/4 tsp nutmeg. Mix and allow the consistency to thicken up (taste test at this point and adjust the seasonings accordingly). Once done, add in the gnocchi, the chicken, and 3 handfuls of fresh spinach. Mix together and cook for another five minutes. Serve and enjoy!
