The perfect side dish for any occassion is anything classic or old school, just like this yummy potato salad recipe by The Danni Rose on YouTube! This simple dish is uses only a few ingredients and has a perfectly balanced taste. Serve this to your family and friends on special occassions, parties, or even ordinary mealtimes.

Ingredients:

  • 5 medium-sized russet potatoes
  • 1 cup mayonnaise
  • ¼ cup mustard
  • 3 tbsp sugar
  • 1 cup salad cubes or ½ cup chopped gherkin pickles plus ¼ cup sweet relish
  • 4 boiled eggs
  • Chicken stock or chicken bouillon powder
  • 2 tbsp salt, to boil the eggs
  • 2 tbsp salt, to boil the potatoes
  • Black pepper
  • Paprika

Directions:

Step 1

Wash the potatoes well, then pat them dry, and peel their skin off. Dice the potatoes, then put them in a pot filled with water. Drain off the cloudy water on the pot, then replace it or you can use chicken stock instead. If you’re using water, add some chicken bouillon powder to taste, then place the pot on a stove over medium-high heat, and bring it to a boil for about 6 minutes. Drain the water off the boiled potatoes, then put them in a large mixing bowl, and leave it to cool down. After letting it cool down for a few minutes, place it in a refrigerator to cool down completely. Now, place the eggs in a pot filled with water, then sprinkle some salt, and bring it to a boil. Once boiling, remove it from the heat, and cover it with the lid leaving it for about 14 minutes.

Step 2

After 14 minutes, remove the eggs, then put it in a large bowl, pour cold water, and add some ice cubes. Let the eggs sit in the cold water for a few minutes, peel off the eggs, then cut them into small pieces, and put them in a bowl. In a separate mixing bowl, add the mayonnaise, mustard, sugar, black pepper, paprika, sweet salad cubes without the juice, then stir them all together until well combined. Add the sliced eggs, give it a good stir until combined, then taste and adjust the seasonings if needed. Now, add the boiled potatoes, then gently fold it in, and adjust the taste if needed. Put in a serving bowl or plate, then top it with some sliced boiled eggs on top, and sprinkle paprika all over them. You can serve and eat it immediately or refrigerate it before serving.
