Note: make sure to clean your chicken well
In a large pot, add the chicken and 4 quarts of water. Season with salt and pepper. Place the lid and let it simmer until the chicken is tender. Once tender, remove the chicken and set it aside.
Prepare the vegetables while waiting for the chicken to cook.
Add the prepared onions, carrots, celery, and potatoes. Mix and place back the lid. Cook for 20 to 30 minutes.
Add the zucchini, green beans, corn, and tomatoes. Give it a stir and place back the lid. Let it simmer until it’s reduced for about 30 minutes. Season the soup with more salt and pepper.
Cut the chicken into small pieces. Turn the heat to low, then add back the chicken. Make a taste test and adjust seasonings if needed. Add the green onions and let it simmer for 10 to 15 minutes with the lid slightly open.
Serve in a bowl with some crackers and enjoy!
