Ingredients:

  • 1½ cups of flour
  • 2 tsp of baking powder
  • ¾ cup of sugar
  • 2 apples
  • ½ cup of toasted walnuts
  • 2 large or 3 small eggs
  • ½ cup of vegetable oil
  • ½ cup of natural yogurt
  • Zest of half a lemon
  • 1 tsp of vanilla extract

Directions:

Step 1

In a large mixing bowl, add the flour, baking powder, and sugar, whisk them together until well combined and uniform, then fold in the apples until well coated, add the walnuts folding them in as well until well coated, and set them aside. In a separate mixing bowl, add the eggs, yogurt, vanilla extract, vegetable oil, and lemon zest, then mix them together until well combined and incorporated.

Step 2

Next, pour the wet mixture into the dry apple and walnut mixture, then give them a good mix until incorporated and fully combined, and set aside. Line a 9-inch springform cake pan with parchment paper, then generously grease, and add the batter spreading it nice and even. Bake it in a preheated oven at 355°F for about 35 to 40 minutes, then dust it with powdered sugar, serve, and enjoy!
