One classic recipe that I remember so well, would be the classic bananas foster. There was this restaurant near our place where they serve this and torch it at our table, I thought it was just a party trick or something they do to impress the guests, but now I get why they do that. It was thanks to Preppy Kitchen via YouTube for bringing this classic sweet treat back, now I can easily make this recipe whenever I please!

Ingredients:

  • ½ cup or 1 stick (113g) of unsalted butter
  • ¾ cup or (165g) of packed dark brown sugar
  • ½ teaspoon of ground cinnamon
  • 3 large Bananas, halved lengthwise
  • ⅓ cup or (80mL) of rum
  • Vanilla ice cream, to serve

Directions:

Step 1

Sprinkle and crumble the sugar onto a large saucepan or skillet, then add half a teaspoon of cinnamon, and half a cup of butter. Place the saucepan or skillet on a stove over medium-high heat (if you find that too high, you can lower your heat up to a medium). Let it cook and stir often until the butter is melted and the mixture becomes bubbly, this will take about 4 minutes. Slice the peeled bananas in half lengthwise, then add them onto the sugar mixture. Let it cook and gently stir often, until tender for about 4 minutes.

Step 2

Pour the rum over the mixture and remove the saucepan or skillet from the heat. The next step should be done with caution, using a long lighter, long match, or blow torch, carefully ignite the rum, and swirl the pan constantly until the flames die out for about 30 seconds. This will activate the flavor of the rum, however, if you don’t feel comfortable doing this step, you can just add the rum and continue cooking for about 1 minute, then remove it from the heat. Serve it immediately over a scoop of ice cream.
