If you don’t know what to prepare for a Sunday family meal, then try this classic and old-fashioned meatloaf recipe by The Hillbilly Kitchen – Down Home Country Cooking on YouTube! This tasty dish is always a sure hit and never fails to satisfy one’s stomach, plus it can be cooked in a skillet.

Ingredients:

  • 1 pound Ground beef
  • 2 tablespoons Ketchup
  • ½ cup BBQ sauce
  • 1 sleeve Saltine crackers, crumbled
  • 1 tsp Garlic, minced
  • 1 Egg, beaten
  • ½ cup Green bell pepper, chopped
  • ½ cup Onion, chopped
  • Salt, pepper, garlic, and onion powder to taste

Directions:

Step 1

In a small mixing bowl, beat the egg well, add in half of the bbq sauce, then add the ketchup, minced garlic, onion powder, salt, and pepper, mix them together until incorporated. Prepare a large mixing bowl then place the ground beef in it, pour the sauce mixture, crumbs of saltine crackers, chopped onion, and chopped bell peppers. Mix all those ingredients together carefully, remember to not overmix and squeeze too hard or it will end up with a hard texture once cooked.

Step 2

Once it’s well combined, scoop all of the mixtures and transfer them onto a skillet pan, and spread them evenly. Cover the pan with a sheet of aluminum foil and bake in a preheated oven at 350°F/177°C for about 2.5 to 3 hours or until it’s firm in the middle and brown on top. If you want to check if the meat is done cooking, stick a thermometer at the center and if it is 160 degrees, then it is cooked. Spread the remaining bbq sauce all over the top of the meatloaf and put it back in the oven for a few more minutes depending on your preference or until the bbq sauce is nice, bubbly, and sticky.
