It’s that time of the year where gingerbread recipes will start pouring out, but this specific old-fashioned gingerbread recipe by Southern Living is unique. The whipped cream on top that is sprinkled with powdered sugar sounds like sweet heaven. Honestly, it’s the best part, and I haven’t had gingerbread cake before with whipped cream. However, I don’t like gingerbread cookies, but gingerbread cake is one of my favorites when it comes to the holidays. Also, it’s a one-bowl wonder recipe that doesn’t require many tools such as a hand mixer. Just have a bowl, whisk and pan ready to go.

Ingredients:

  • 2/3 cup packed dark brown sugar
  • 2/3 cup molasses or sorghum syrup
  • 2/3 cup boiling water
  • 1/4 cup cold unsalted butter, cubed 
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 large egg
  • 1 1/2 cups all-purpose flour, plus more for pan
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon black pepper
  • Powdered sugar, for dusting
  • Brown Sugar-and-Ginger Whipped Cream

Directions:

First, preheat the oven to 350F. Whisk together brown sugar, molasses, boiling water, and cubed butter in a medium bowl until butter melts. Whisk in baking soda and salt. Let stand until lukewarm for about 25 minutes. Continue to watch the Southern Living tutorial on YouTube

Next, once the gingerbread mixture is ready, pour it into a 9×9 inch square pan and bake for about 20-25 minutes. Let it cool in the pan for 10 minutes and transfer it to a cooling rack to cool completely for an hour.
