This butterscotch pie is the most delicious pie you’ll want more than one of. I’ve been learning how to make lots of pies lately, from banana cream to strawberry. Whippoorwill Holler’s butterscotch pie is light, creamy, and topped with meringue. Best of all, it’s not overly complicated to make and doesn’t take too much time. Most of the ingredients, you likely already have at home.

Ingredients Needed For This Recipe

  • Brown Sugar 
  • Cornstarch
  • Salt
  • Milk
  • Heavy Cream
  • Butter
  • Vanilla
  • Egg Yolks
  • Pie Crust
  • Egg Whites
  • Sugar
  • Cream of  Tartar
  • Vanilla

Directions

Step One

Heat your pan on the stove on high. Pour in the milk, egg yolks, brown sugar, corn starch, and ½ a teaspoon of salt. Get the cream cooked well and thick before adding butter. Let it come to a boil at medium-high, when it starts to thicken up a bit, turn the heat down to medium-low.

Step Two

Add the butter. Make sure your cream is thick enough before doing this step, If the cream isn’t thick enough, it won’t set up in the pie crust well.

Step Three

After pouring the meringue into the pie crust, start making the meringue. Pour in 4 large egg whites to your mixer. Bring it to a frothy stage. Add in 1/8th a teaspoon of cream of tartar. Whip it till it gets to a soft peak stage.

Step Four

Add sugar into the meringue. Mix it till you get a thick but still creamy consistency. 

Step Five

Put your meringue onto the pie and place it into the oven at 400 degrees till it’s good and brown. Try and get it sealed on the edges of the pan to make sure it cooks evenly. Once the edges are good and brown, take it out of the oven and enjoy!
