Butterscotch pie is an old fashioned type of pie that uses butter, cream, and sugar and turns into butterscotch filling. Whippoorwill Holler tutorial on YouTube shows how simple it is to keep the old flavors alive. I’ve never had this type of pie, but my dad would love it because he loves butterscotch flavored things. This would be a great Fall dessert with it’s creamy and sweet custard filling. It would be a great holiday pie too to sweet up from the pumpkin or sweet potato pie. It’s an easy recipe to follow along with, and butterscotch pie filling is easily made on the stove top.

Ingredients:

For Pie:

  • 1 cup brown sugar
  • 1/4 cup cornstarch
  • 1/2 tsp salt
  • 2 cup milk
  • 2/3 cup heavy cream
  • 3 tbsp butter
  • 2 tsp vanilla

For Meringue:

  • 3 egg yolks
  • 4 egg whites
  • 4 tsp sugar
  • 1/8 tsp cream of  tarter
  • 1/2 tsp vanilla

Directions:

First, add your pie filling ingredients in a small pot and keep it on medium-high heat. Mix everything together until it thickens. Keep stirring and wait for it to boil. Once it thickens, turn it on low. Then, when the pie filling is finished, pour it into your pie crust.

Overall, the pie looks very creamy and I love the meringue on top because it adds a nice golden brown color to the pie. It makes the pie look extra fancy, but if you don’t like meringue, skip on it and add whipped cream on top. I think adding a wild card pie like an old fashioned butterscotch pie to the mix of other pies for the holidays would be a great change.
