  • 4 medium potatoes, peeled, cleaned, and sliced in half
  • 1 cup celery, cut into 1-inch pieces
  • 2 carrots, peeled, cleaned, and cut into 1-2 inch pieces
  • 1 cup tomato juice
  • 1 1/2 cup beef stock
  • 1/2 teaspoon kosher salt, optional
