These homemade energy snacks are seriously better than any store-bought energy snacks I have tried. It is crunchy and packed with flavors. I absolutely love the chocolate-coated part with a sprinkle of flaked salt. It is the best snack to eat before a workout or a long day at work.

In a pan, add 3.5 oz of cashews and 2 oz of peanuts. Fry until toasted.
Transfer the toasted nuts into a food processor. Grind until it turns into crumbs. Transfer to a bowl.
In the same bowl, add the almonds, remaining cashews, pumpkin seeds, sunflower seeds, sesame seeds, chopped cranberries, and cinnamon. Mix until well combined.
Add the natural honey to the mixture and mix until well incorporated.
Line a baking sheet with parchment paper, then grease with oil.
Place a cookie cutter on your prepare baking sheet and fill with the mixture. Press it down to form a cookie using the back of the spoon. Repeat with the remaining mixture.
Bake in the oven at 320F for about 20 minutes.
Chop the chocolate and place in a bowl. Add 1 tablespoon of coconut oil, then melt until smooth.
Once the cookies are done baking, let them cool, then dip half into the chocolate. Place on a parchment paper, then sprinkle salt flakes. Let the chocolate set in the refrigerator for 10 minutes. Serve and enjoy!
