Ingredients:

Starter:

  • 3 1/2 tbsp water
  • 1/2 tsp dry yeast
  • 1 tsp sugar (optional)
  • 1/2 cup bread flour

Dough:

  • 2 cups bread flour
  • 1 cup water
  • 1 cup rolled oats
  • 1 1/2 tsp salt

Directions:

Step 1

Add 1 cup of rolled oats in a bowl, then pour 1 cup of water. Mix and set it aside. For the starter, combine 3 1/2 tbsp 1/2 tsp dry yeast, and 1 tsp sugar in a bowl and mix well. Next, stir in 1/2 cup bread flour, cover the bowl, and let it rise for 20 minutes. After 20 minutes, add in the oats, and mix them together. Once done, add another 2 cups of bread four along with 1 1/2 tsp salt. Mix well until well combined. (You can just mix it, no need to knead.) After this, cover the bowl and let the dough rise for 30 minutes.

Step 2

Now, dampen your hands, stretch the four sides of the dough, and then fold it to the center. Next, lift it and slap it back. Then, cover it again, and let it rest for 30 minutes. After 30 minutes, repeat the steps from earlier, then cover and let it rise for two hours.

Step 3

Sprinkle some flour to your working area, then transfer the dough. Fold the dough, then cut it into six equal parts. Roll each piece into a ball, and rub it against the work surface to seal. After this, fold the bottom part to tighten the surface, then roll it again. Brush the bread with water, then coat the top with some rolled oats. Place it on a parchment paper-lined baking sheet.

Step 4

Repeat the steps to the remaining dough ball. Once done, cover the bread with a towel and let rise for 30 minutes. After rising, score the bread with a sharp knife. Sprinkle some water, then cover them with another tray. Bake them at 430 degrees F for 20 minutes, then remove the tray and bake for a further 10 minutes.
