This dessert requires no baking and is super easy to do with only about 6 ingredients. Ingredients:

  • 2 cups of powdered sugar, sifted
  • 8 ounces of cream cheese, softened
  • 8 ounces of Cool Whip
  • 20 ounces of crushed pineapple, drained well

Crust

  • 2½ cups of graham crumbs, 2 sleeves
  • ½ cup of unsalted butter, melted

Directions:

Step 1

Crush the graham crackers in a food processor or if you don’t have one, simply put the graham crackers in a ziplock bag, and crush them with a rolling pin. After melting the butter in the microwave and allowing it to cool, add it to the cracker crumbs, then toss them together until well combined and incorporated. Reserve about half a cup of this mixture, then place the remaining into the bottom of a baking dish and press firmly. Put it in the refrigerator and let it chill for about 15 minutes.

Step 2

In a mixing bowl, add the cream cheese, then beat it before adding the powdered sugar one cup at a time, and beat them together until incorporated. Increase the speed and beat well for a minute or so before adding half of the drained pineapple, then stir them together with a spatula until well combined. Spread this mixture over the chilled mixture until nice and even, then fold the remaining pineapple into the Cool Whip, and spread this on top of the cream cheese mixture layer evenly. Sprinkle the reserved cracker crumbs all over the top, then put it in the refrigerator, and leave it for at least 4 hours or up to overnight. Slice, then serve, and enjoy!
