To make this fridge tart, you’ll need tennis biscuits, condensed milk, caster sugar, water, cream, vanilla, custard powder, salt, eggs, icing sugar, passion fruit, and butter. If you don’t have tennis biscuits, use graham crackers and desiccated coconut.

Note: you can substitute passion fruit for strawberries, crushed pineapples, or blueberries
Line the bottom of a baking pan with tennis biscuits.
In a bowl, add 1 cup water, eggs, custard powder, and salt. Mix until well combined.
In a pot over medium heat, add the condensed milk, cream, water, and vanilla essence. Let the mixture come to a boil.
Slowly pour a little bit of the hot milk mixture into the egg mixture.
Place the milk mixture back over medium heat, then slowly add the egg mixture, whisking throughout. Mix until smooth and thick.
Pour the mixture over the tennis biscuits, then add some tennis biscuits on top. Cover with cling wrap and refrigerate for 4 hours.
In a mixing bowl, add icing sugar, butter, and passionfruit. Mix until smooth.
Pour the icing on top of the biscuits and refrigerate for 30 minutes. Slice into squares and serve. Enjoy!
