I first tried these no-bake coconut rum balls at a friend’s party and instantly got addicted to this dessert recipe by Haminyami. Anything coconut is too good to resist! I am not sure why I haven’t had this before. The flavors of cranberry, cinnamon, cocoa powder, and rum combined and then coated with shredded coconut are heavenly! It’s so yummy, you probably won’t notice you’ve eaten a lot already. But be careful when giving these to kids, as it contains alcohol. Unlike other recipes, these treats are not baked, so the alcohol in the rum does not cook out. These chocolate balls are perfect for parties and gatherings for adults. Break the biscuits and place them in a food processor or grinder. Crush until they turn into fine crumbs, then transfer into a bowl. If you don’t have a grinder at home, you can put them in a zip-lock bag and crush them using a rolling pin.
Add 1.5 tablespoons of cocoa powder and 1 teaspoon of cinnamon powder, 1 tablespoon of cranberry jam, 1.7 oz of rum, and 1.7 oz of water to the fine crumbs. Mix until well combined.
Get a tablespoon of the mixture and form it into a ball. Place on a plate. Repeat with the remaining mixture.
Place the shredded coconut into a bowl, then coat the chocolate balls. You can serve them right away, but it’s better to serve cold. Place it in the refrigerator for a few hours if preferred.
