Add the Oreo cookies to a food processor and blitz them until finely crushed. After this, transfer the blitzed Oreo cookies to a large mixing bowl and add 3 tbsp melted butter. Mix well, then transfer it to a removable bottom pan, pushing it to the bottom lightly and evenly. Refrigerate it for 30 minutes. Next microwave 1 cup of semi-sweet chocolate chips to melt them, then set it aside. After this, beat the cream cheese with a handheld mixer until smooth, then add 3/4 cup of icing sugar followed by 1 tsp vanilla essence. Continue to mix until combined. Once it’s smooth, add the melted chocolate.

Beat the whipping cream until soft peaks form, then add it to the chocolate mixture and fold gently. Once combined, transfer the mixture to the prepared crust and spread it nicely and evenly. Chill it in the refrigerator for ten to twelve hours or until fully set. For the chocolate ganache, combine the chocolate chips and hot whipping cream. Leave it for two minutes, then mix. Pour it over the chilled cheesecake and refrigerate it for two hours.
