Start by making the crust. Line an 8 by 8 glass pan with parchment paper, then set it aside.
In a bowl, add graham cracker crumbs and sugar. Stir until well combined. Next, add melted butter and stir until it resembles wet sand.
Transfer the mixture to the prepared pan and spread it evenly. Press it down as tight as you can using the bottom of a measuring cup. Put into the freezer until ready to use.
Make the filling. Add heavy whipping cream in a large bowl, then mix on medium-high until the cream becomes fluffy and can hold stiff peaks. Set it aside.
In a large bowl, add cream cheese and powdered sugar. Cream together, then add lemon juice and melted vanilla baking chips.
Using a rubber spatula, fold in whipped cream until well mixed. Transfer onto the prepared crust and spread evenly.
Cover it with plastic wrap and refrigerate it overnight for at least 3 hours or until firm.
When it’s ready to serve, add the chilled cherries on top. Remove it from the pan and slice into bars. Serve and enjoy!
