Add the unsalted butter in a small pan over low heat. Cook until browned. Brown butter can enhance the nutty flavor of the brownie. Once melted, set it aside and let it cool to 132- 140F.
Break the chocolate into small pieces and place in a bowl. Slowly pour the slightly cooled butter into a strainer directly on top of the chocolates. Mix until the chocolate is completely melted. If not melted, heat in a double boiler or microwave for 10 seconds.
In a large bowl, add 3 room temperature eggs and beat with a whisk. Add the salt, brown sugar, and white sugar. Whisk until well combined.
Pour the melted chocolate-butter mixture into the beaten eggs. Mix until well combined. Add the coffee and mix again. It should have a thick consistency.
Sift the cake flour and unsweetened cocoa powder into the chocolate mixture. Mix until just combined and there is no white powder. Do not overmix the batter.
Transfer the batter into a non-stick mold with a separator. If it’s not non-stick, you need to grease your mold. Add your favorite toppings. You can put, cookies, nuts, or marshmallows.
Place inside the oven and bake at 356F for 18 to 20 minutes. Once done, remove the middle separator and the mold. Serve and enjoy!
