Ingredients:

  • 1 cup champagne
  • 1/4 cup of heavy cream
  • 11 oz white chocolate chips
  • 1/4 cup of unsalted butter

For the dough:

  • 1 cup of unsalted butter
  • 4 tbsp powdered sugar
  • 1 tsp vanilla
  • 2 cups of flour
  • 1 tsp salt
  • 2 cups of finely ground walnuts

For the chocolate ganache:

  • 1 tbsp heavy cream
  • 5 oz semi-sweet chocolate chip

Directions:

Step 1

In a small saucepan, add 1 cup of champagne, boil it, and reduce it by half. Next, microwave 1/4 cup of heavy cream until boiling, then pour it into a bowl with 11 oz white chocolate chips, then add the heated champagne (leave some for later). Leave it to rest for a minute, then whisk it until the chocolate chips fully melted. After this, add 1/4 cup of unsalted butter and continue to whisk. Cover it and chill in the fridge for two hours. In another bowl, add 1 cup of unsalted butter and 4 tbsp powdered sugar. Blend it, then add 1 tsp vanilla. Add 2 cups of flour gradually while blending the mixture. Add 1 tsp salt, and 2 cups of finely ground walnuts and just continue to blend, then switch to your hands and knead the mixture lightly. Refrigerate for at least 30 minutes.

Step 2

Scoop the mixture into a baking tray lined with parchment paper. Flatten out each scoop of dough to your palm, add some white chocolate chip filling to the center, then shape it into a ball again. Refrigerate for 15 minutes, then bake at 375 degrees F for 15 minutes. While waiting, microwave 1 tbsp heavy cream until boiling and pour it over to a bowl of 5 oz semi-sweet chocolate chip, then add the rest of the heated champagne. Whisk until the chocolate chips are fully melted. Dip the upper half of the cookies into the chocolate mixture, then sprinkle some gold dust on top.
