Honestly, I didn’t expect much when I first made this cake at home, but it surprisingly turned out better than I expected. It was moist, perfectly sweet, and nutty. To make this walnut cake, you’ll need eggs, granulated sugar, vanilla extract, vegetable oil, milk, walnuts, all-purpose flour, and baking powder. It comes together easily and quickly. Mix all the ingredients in a bowl, transfer to a baking dish, top with nuts, and it’s ready to bake. The last thing you need to do is pour the sugar syrup on top. How easy is that? For the syrup:
Preheat the oven to 350F.
In a bowl, add the eggs, granulated sugar, and vanilla extract. Whisk until foamy.
Add the vegetable oil and whisk on low speed until well combined. Pour the milk and mix again.
Whisk in the coarsely chopped walnuts.
Fold in the flour using a rubber spatula until just combined.
Transfer the mixture into a 9×9 baking dish. Spread it evenly. Sprinkle the reserved walnuts on top.
Place in the preheated oven and bake for 30 minutes.
While baking, make the syrup. Place a saucepan over heat and add the water and sugar. Mix well. Let it boil for 15 to 17 minutes on medium heat.
Once the cake is done baking, remove it from the oven and pour the syrup all over the top. Let it cool before serving.
Once cooled, slice and serve. Enjoy!
