If you love banana bread, you will definitely enjoy these moist banana chocolate chip muffins by Simply Home Cooked. My kids couldn’t stop talking about these goodies when I first made it at home. Have them with a cup of coffee, chocolate, or tea for a delicious breakfast.
Ingredients
- 3/4 cup of unsalted butter melted
- 1/4 cup of granulated sugar
- 1/2 cup of golden brown sugar
- 2 eggs
- 1 teaspoon of vanilla extract
- 4 ripe bananas
- 1 3/4 cups of all-purpose flour
- 1 teaspoon of baking soda
- 1/2 teaspoon of salt
- 1 cup of semisweet chocolate chips
- 1 cup of walnuts (chopped)

Instructions
Step 1:
In a large bowl, add granulated sugar, brown sugar, and melted butter. Mix on medium-low speed using a hand mixer. If the melted sugar is not mixing with the sugar, just keep mixing for a few more minutes.
Step 2:
Add 2 large eggs, followed by 1 teaspoon of vanilla extract. Mix again with your hand mixer at medium-low speed.
Step 3:
Peel the bananas and place them in a large bowl. Mash it with a masher or fork until it has an apple sauce consistency.
Step 4:
Add the mashed bananas to the mixture and mix again at medium-low speed.
Step 5:
Place a fine mesh sieve over the mixture and sift 1 3/4 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. Mix at low speed until there are no patches of flour.
Step 6:
Add 1 cup of semisweet chocolate chips along with 1 cup of coarsely chopped walnuts into the mixture. Use a spatula to fold everything together. Make sure to scrape down the sides and the bottom of the bowl.
Step 7:
Preheat the oven to 350 F, then line your muffin tin with cupcake liners.
Step 8:
Scoop your batter and add to each cup. Add extra chocolate chips on top if preferred.
Step 9:
Place inside the oven and bake for about 20 to 24 minutes. Once done baking, remove from the tray and let it cool for a few minutes. Serve and enjoy!
