Who doesn’t love fresh coconut juice and meat? There’s something about coconuts that is so refreshing. It reminds me of the warm weather and summer days, so I always make desserts with it as the main ingredient. One of my favorites is this recipe by valerie is cooking – it’s the most delicious coconut cake I have ever tasted. You’ll be surprised how moist it is. For this recipe, you only need 7 ingredients, and most of them are already in your pantry. How great is that? Ingredients:
- 2 and 1/2 cups of unsweetened coconut flakes
- 3 large eggs
- 1/2 cup of sugar
- 1 cup of heavy cream
- 1 teaspoon of vanilla extract
- a pinch of salt
- 1 teaspoon of baking powder

Instructions:
Step 1:
Add 3 eggs, 1/2 cup of granulated sugar, and 1 teaspoon of vanilla extract into a mixing bowl. Whisk until well combined.
Step 2:
Continuously stir while adding 1 cup of cream to the mixture, then add 2 and 1/2 cups of unsweetened coconut flakes and a pinch of salt. Fold until it’s well incorporated using a silicone spatula. Cover the bowl with a cling wrap, then place it inside the refrigerator for 30 minutes to let the coconut absorb the mixture.
Step 3:
Remove the cling wrap – it should now be thicker. Add 1 teaspoon of baking powder and mix well.
Step 4:
Transfer the mixture to a 9″ baking pan lined with parchment paper on all sides. Flatten it with a silicone spatula.
Step 5:
Place it inside the oven and bake at 350F for 35 to 40 minutes.
Step 6:
Once done baking, remove the cake from the oven. Then, take it out from the mold by pulling the parchment paper.
Step 7:
Let it cool for a while, then slice it into squares. Serve and enjoy with your family or friends!
