All you have to do is mix all the nuts in one mixing bowl, season it with some salt and honey, mix it together, and then form them into cookies! Soak the raisins and goji berries in water and leave them for ten minutes. Next, grease and line your baking sheet with parchment paper, then add 1/2 cup whole almond and 1/2 cup cashew nuts. Roast them in the oven at 300 degrees F for ten minutes. Once done, transfer the nuts to a large mixing bowl, then add 1/2 cup pumpkin seeds, 3/4 cup sliced almond, 1/2 cup sunflower seeds, 1/4 cup black sesame seeds, 1/4 cup white sesame seeds, 1/4 cup soaked raisins, and 1/4 cup goji berries. Mix everything well together. Season with a pinch of salt and 1 tbsp honey, then add the egg white gradually. Stir together until combined.
Using a cookie mold, shape the nuts into circles right into the prepared baking sheet. Press down the cookie to stay in shape before removing the cookie mold. Repeat these steps until you fill the baking sheet with cookies. Once done, place the baking sheet with cookies in a 300-degree F oven and bake them for fifteen minutes. Serve and enjoy!
