This recipe is a staple in our home, and my kids absolutely adore this dessert. I love how easy and fun to make these mini cakes are, and you can even serve them with any fresh slices of fruit of your choice. My go-to is definitely strawberries, but it also goes great with kiwi! Ingredients:

  • 1 cup of sugar
  • 1 egg
  • 1 tsp pure vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup hot coffee (or hot water)
  • 1/4 cup vegetable oil
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Chocolate Ganache:

  • 1/2 cup heavy whipping cream (heated)
  • 2/3 cup semi-sweet chocolate chips

Directions:

Step 1

In a large bowl, add 1 cup of sugar, then sift 1 cup of all-purpose flour, 1/2 tsp baking soda, 1 tsp baking powder,  1/2 tsp salt, and 1/2 cup cocoa powder. Mix together to combine. After this, make a well in the center and add 1 cup of oil, 1 egg, 1 tsp pure vanilla extract, and 1/2 cup buttermilk. Gently combine them with the dry ingredients, then add 1/2 cup of hot coffee (or hot water). Once the batter comes together, divide it into the mini bundt tray.

Step 2

Bake it at 350 degrees F for 20 to 25 minutes. Once done baking, remove it from the oven and let it cool down for ten minutes. In the meantime, make the chocolate ganache. Transfer the chocolate chips to a bowl, then gently pour the 1/2 cup hot heavy whipping cream. Leave it for three minutes, then mix until smooth. Now, pour it over each mini bundt cake. Serve with some fresh strawberries and more grated chocolate. Enjoy!
