For filling:
In a large bowl, add all ingredients for the filling except the chocolate chips. Mix well with an electric mixer until creamy. Transfer the filling to a 1-gallon plastic storage bag and set it aside to chill.
Preheat your oven to 425F.
Unroll the pie crusts onto a lightly floured surface. Sprinkle each with natural sugar and cinnamon. Gently roll over a rolling pin to press the sugar and cinnamon into the dough.
Cut out circles using a 2 1/2 – 3 inch round cookie cutter, then lightly press each inside an ungreased mini muffin tin to create a pastry cup. Bake for 10 minutes then remove from the oven to cool. Once they are cooled, remove them from the tin.
Get the filling and cut one of the bottom corners of the bag. Pipe a tablespoon of the filling into the cooled cannoli cups. Sprinkle mini chocolate chips, then dust with powdered sugar. Serve immediately.
