Ingredients:

  • 2 cups long-grain rice, rinsed and drained several times
  • 2 1/2 tbsp avocado oil
  • 1 large onion, finely chopped
  • 2 Anaheim peppers, seeds, and stem removed, then finely chopped
  • 6 cloves of garlic, minced
  • 2 cups finely chopped tomatoes
  • 1 1/2 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/4 tsp ground cumin
  • 1 1/2 tsp fine sea salt
  • 2 1/2 cups chicken stock
  • cilantro, sliced green onion, and lime, for serving

Directions:

Step 1

Finely chop one large onion, mince six cloves of garlic, and finely chop two Anaheim peppers. Transfer them all to a large mixing bowl. Lastly, finely chopped 2 cups worth of tomatoes. Now, heat a heavy-bottomed saucepan over medium heat, add some olive oil, then add the chopped onion, garlic, and peppers. Saute for five minutes or until translucent. Next, add 2 cups of long-grain white Basmati rice and stir for a few minutes.

Step 2

Season the rice with 1 1/2 tsp oregano, 1/2 tsp smoked paprika, 1/2 tsp chili powder, 1/4 tsp cumin, and 1/2 tsp salt. Stir together and cook for one minute. After this, add the chopped tomatoes with all their juices and 2 1/2 cups of stock. Bring to a boil, then cover the pot with its lid. Simmer for 14 minutes over low heat. After simmering, remove the saucepan from the stove covered and let it sit for ten minutes. Once done, remove the lid and fluff the rice with a fork. Serve and enjoy!
