Ingredients:

  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 lb ground beef, minced
  • 1/3 cup tomato paste
  • 1 1/4 cups of long-grain white rice, uncooked
  • 2 1/2 cups of chicken broth, low-sodium
  • 14 oz can black beans, drained
  • 14 oz can corn kernels, drained
  • 1 bell pepper, diced
  • 1 cup of green onion, chopped
  • 2 cups of shredded mozzarella cheese, divided

Spices:

  • 1/2 tsp cayenne pepper
  • 1 1/2 tbsp dried oregano
  • 3 tsp cumin
  • 3 tsp coriander
  • 3 tsp onion powder
  • 2 tsp paprika
  • 1/2 tsp salt

Directions:

Step 1

Heat 2 tbsp olive oil in a pan over high heat, then add the chopped onion and minced garlic. Saute until fragrant, then add the ground beef. Continue to cook until the meat turned brown. Season with 1/2 tsp cayenne pepper, 1 1/2 tbsp dried oregano, 3 tsp cumin, 3 tsp coriander, 3 tsp onion powder, and 2 tsp paprika. Mix well, then add the diced bell pepper. Next, add 1/3 cup of tomato paste, 2 1/2 cups of chicken broth, 14 oz can corn kernels, 14 oz can black beans, and 1 1/4 cups of long-grain white rice. Mix until the ingredients are well incorporated.

Step 2

Once mixed, cover it with a lid and let the rice cook for fifteen minutes. After this, add 1 cup of shredded mozzarella cheese and 1 cup of chopped green onion. Mix well, then top everything with another cup of shredded mozzarella cheese. Cover it and let the cheese melt. Garnish with more chopped green onion, then serve.
